Feeding the curiosity, the senses and desire of each guest, Mugaritz seeks to satisfy the hunger for risk, of the game or of answers and the pleasure of surprising oneself by discovering and exploring the unknown. To achieve this, Mugaritz questions the logic of the culinary world, rethinking social norms and prejudices.
The restaurant seeks to create a context in which to exercise the sensory freedom to overcome the imposition of customs. For approximately three hours, and through around 20 creations, the restaurant builds together a story of stories, gestures and emotions around the table and outside of it. Flavours, textures and aromas that are tasted and felt using the hands are the best way to stimulate all the senses and re-encounter with one’s most primary habits.
