Mornings at Kase Lodge begins with Asian fusion and Western breakfast options. Fresh-squeezed juice from the hotel farm is served alongside standard breakfast beverages of guests choosing. Each hotel reservation includes all meals (breakfast, dinner, and mid-day refreshment). 
Each dinner menu is the singular creation of the chefs at Kase Dining based on seasonal ingredients. Through organic local ingredients, prepared in the impeccable kaiseki gourmet style, Kase Dining is farm-to-table par excellence. Set as multi-course meals, these scrumptious, original delicacies are exemplars of Ryokan-inspired luxury cuisine. 

Kase Dining artfully combines historical and contemporary cuisines based on the concept of ongojishin, a Korean idiom meaning study the old, to understand the new.  

To craft signature flavourful experiences, the chefs adapt traditional techniques to modern styles. Each gourmet creation is plated on artisanal tableware specially commissioned for the Kase Dining room to enhance the classic-to-contemporary range of the restaurant’s cuisine.
